Oolong tea, meaning "Black Dragon" tea, represents a category of partially fermented tea. Oolong teas are partially fermented by bruising the edges and the surface of the leaves to expose the plant chemicals for oxidation. Tea artisans can unlock different combinations of taste and aroma by varying the degree of fermentation. Crafting premium oolong tea also requires masterful roasting to develop richness in flavour while balancing the delicate aromas that can be lost during the heat of roasting.
